1/2 cup unsalted butter, melted and slightly cooled
3/4 cup packed light brown sugar
1/4 cup pure maple syrup
1 large egg, room temperature
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup pecans, toasted and roughly chopped
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal later.
In a large mixing bowl, combine the melted butter and brown sugar. Whisk until smooth. Add the maple syrup, egg, and vanilla extract. Continue to whisk until the mixture is well combined and slightly glossy.
In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the blondies tough.
Gently fold in about 3/4 cup of the chopped pecans. Save the remaining 1/4 cup to sprinkle on top for a beautiful presentation and extra crunch.
Spread the batter evenly into the prepared baking pan. Sprinkle the remaining pecans over the top. Bake for 22 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
Place the pan on a wire rack and allow the blondies to cool completely. This is the hardest part, but cooling ensures the fudgy texture sets properly. Once cool, lift them out using the parchment paper and cut into 16 even squares.
