1/2 cup unsalted butter, melted and slightly cooled
3/4 cup packed light brown sugar
1/4 cup pure maple syrup
1 large egg, room temperature
1 teaspoon pure vanilla extract

For the Glaze (Optional): 1/2 cup powdered sugar + 1 tablespoon maple syrup
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving a slight overhang on the sides to make it easy to lift the blondies out later. Lightly grease the paper with cooking spray.
In a large mixing bowl, whisk together the melted butter, light brown sugar, and maple syrup until the mixture is smooth and well combined. Add the egg and vanilla extract, whisking vigorously until the batter looks slightly shiny.
In a separate small bowl, whisk together the flour, cinnamon, ginger, cardamom, cloves, black pepper, baking powder, and salt. Ensuring the spices are evenly distributed in the flour prevents any “spice clumps” in your final bars.
Gently fold the dry ingredients into the wet ingredients using a spatula. Mix just until no streaks of flour remain. Be careful not to overmix, as this can make the blondies tough instead of chewy.
Spread the batter evenly into the prepared baking pan. Bake for 22 to 25 minutes. The edges should be golden brown and slightly pulled away from the sides, but the center should still look a bit soft. Do not overbake!
Allow the blondies to cool completely in the pan. If using the glaze, whisk the powdered sugar and maple syrup together until smooth, then drizzle it over the cooled bars. Slice into 16 squares and enjoy.
