  • 1 tablespoon dried culinary lavender
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Optional: 1 tablespoon honey for added sweetness

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. In a small bowl, use your fingers or a mortar and pestle to rub the dried lavender into the granulated sugar. This process releases the essential oils from the lavender, making the cookies much more fragrant.
  2. In a large mixing bowl, beat the softened butter and the lavender-infused sugar together until the mixture is light and fluffy. This should take about 2 to 3 minutes with an electric mixer. Stir in the vanilla extract and honey, if you are using it.
  3. Sift the all-purpose flour and salt together. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough, as this can make the cookies tough. The dough should be soft and slightly tacky.
  4. Roll the dough into small balls, about one tablespoon each. Place them on the prepared baking sheets, spacing them 2 inches apart. Gently flatten each ball with the palm of your hand or the bottom of a glass. Bake for 10 to 12 minutes, or until the edges are just barely golden brown.
  5. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes. Transfer them to a wire cooling rack to cool completely. This allows the texture to set properly, resulting in a perfect crumb.
