  • 4 large ripe peaches, halved and pitted
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 cup chopped pecans or walnuts
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil or melted butter (for brushing)

Instructions

  1. Clean your grill grates thoroughly to prevent sticking. Preheat your grill to medium-high heat, approximately 350°F to 400°F. If you are using a charcoal grill, wait until the coals have a light coating of grey ash.
  2. In a medium mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, ground cinnamon, salt, and chopped nuts. Add the cubed cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Set this aside in a cool place.
  3. Wash the peaches and cut them in half, removing the pits. Lightly brush the cut sides of the peaches with vegetable oil or melted butter. This prevents them from sticking to the grill and helps them develop those beautiful char marks.
  4. Place the peaches cut-side down directly onto the grill grates. Grill for about 4 to 5 minutes, or until the fruit has softened slightly and has clear grill marks. Carefully flip the peaches over so the skin side is down.
  5. Spoon a generous amount of the oat crumble mixture into the center of each peach half where the pit used to be. Close the grill lid and cook for another 8 to 10 minutes. The topping should be golden brown and the peach juices should be bubbling. Carefully remove from the grill using a spatula.
