  • 1 cup all-purpose flour
  • 2 tablespoons culinary-grade matcha powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 6 ounces white chocolate chips, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (for the hair)
  • 32 edible candy eyes
  • 1 tube black decorating icing or melted dark chocolate

Instructions

  1. Step 1: Preheat and Prepare. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a little overhang on the sides so you can easily lift the brownies out later. Lightly grease the parchment with cooking spray or butter.
  2. Step 2: Combine Dry Ingredients. In a medium-sized bowl, whisk together the all-purpose flour, matcha powder, and salt. Make sure to sift the matcha powder if it looks lumpy to ensure a smooth green color throughout your batter.
  3. Step 3: Mix the Wet Ingredients. In a large bowl, whisk the melted butter and granulated sugar together until well combined. Add the eggs one at a time, beating well after each addition. Stir in the melted white chocolate and vanilla extract until the mixture is smooth and glossy.
  4. Step 4: Fold and Bake. Gradually add the dry ingredients to the wet ingredients. Use a spatula to gently fold everything together until just combined. Do not overmix. Pour the batter into your prepared pan and smooth the top. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
  5. Step 5: Cool and Cut. Allow the brownies to cool completely in the pan. This is very important for getting clean cuts. Once cool, use the parchment paper to lift the brownies out of the pan. Cut them into 16 equal-sized rectangles.
  6. Step 6: Create the Hair. Melt a small amount of extra chocolate or use black icing to create a “glue” at the top of each brownie rectangle. Arrange mini chocolate chips in a jagged line at the top of the rectangle to resemble Frankenstein’s messy hair.
  7. Step 7: Final Decorations. Use a small dot of icing to attach two candy eyes to each brownie. Finally, use the black decorating icing to draw a straight or stitched line for the mouth and a small “scar” on the cheek. Your Frankenstein monsters are ready!
