  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 1/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • Oil for frying (vegetable or canola)
  • For Coating: 1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. In a large mixing bowl, whisk together the pumpkin puree, egg, and 1/4 cup of sugar until the mixture is smooth and well combined.
  2. In a separate medium bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add these dry ingredients to the pumpkin mixture, alternating with the milk. Stir until just combined, being careful not to overmix the batter.
  3. Pour about 2 inches of oil into a deep skillet or saucepan. Heat the oil over medium heat until it reaches 350°F (175°C). If you don’t have a thermometer, a small drop of batter should sizzle and float to the top immediately when the oil is ready.
  4. Carefully drop rounded tablespoons of the batter into the hot oil. Do not overcrowd the pan; fry about 4 to 5 at a time. Cook for 2 to 3 minutes per side until they are golden brown and cooked through. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain briefly.
  5. While the fritters are still warm, toss them in the bowl containing the cinnamon-sugar mixture. Roll them around until they are evenly coated on all sides. Serve immediately for the best texture.
