  • 3 cups apples, peeled and chopped (Granny Smith or Honeycrisp work best)
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for the batter)
  • For the Topping: 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Step 1: Preparation and Preheating Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or a large springform pan to ensure the cake does not stick.
  2. Step 2: Creaming Butter and Sugar In a large mixing bowl, beat the softened butter and 1 1/2 cups of sugar together until the mixture is light and fluffy. This should take about 3 minutes with a hand mixer.
  3. Step 3: Adding Wet Ingredients Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and the milk until the mixture is smooth.
  4. Step 4: Mixing Dry Ingredients In a separate bowl, whisk together the flour, baking powder, salt, and 1/2 teaspoon of cinnamon. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  5. Step 5: Folding in Apples Gently fold the chopped apples into the batter using a spatula. Ensure the apples are evenly distributed so every slice has plenty of fruit.
  6. Step 6: Adding the Topping and Baking Pour the batter into the prepared pan and spread it evenly. Sprinkle the cinnamon-sugar topping mixture generously over the top. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
