Ingredients

Scale
  • 2 cups Granny Smith apples, peeled and chopped
  • 1/3 cup light brown sugar
  • 1 tablespoon ground cinnamon (divided)
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup whole milk
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk or heavy cream (for glaze)

Instructions

  1. Step 1: Preparation and Preheating: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick cooking spray. You can also line it with parchment paper for easier removal later.
  2. Step 2: Prepare the Apple Mixture: In a medium bowl, toss the chopped apples with the brown sugar and 1 teaspoon of the ground cinnamon. Stir until the apples are evenly coated and set them aside to let the juices release.
  3. Step 3: Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes with an electric mixer.
  4. Step 4: Incorporate Wet Ingredients: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until the mixture is smooth and fragrant.
  5. Step 5: Add Dry Ingredients and Milk: Whisk together the flour and baking powder in a separate bowl. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour, mixing just until combined. Be careful not to overmix.
  6. Step 6: Layer the Batter and Apples: Pour half of the batter into the prepared loaf pan. Top with half of the apple mixture and gently press them into the batter. Pour the remaining batter over the apples, then top with the rest of the apple mixture. Use a knife to lightly swirl the apples into the top layer of batter.
  7. Step 7: Bake the Bread: Place the pan in the center of the oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with foil for the last 10 minutes.
  8. Step 8: Glaze and Cool: Let the bread cool in the pan for 15 minutes. While it cools, whisk the powdered sugar and 1 tablespoon of milk together to create a smooth glaze. Drizzle the glaze over the warm bread before removing it from the pan to cool completely on a wire rack.
