Ingredients

Scale
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 large apples (Granny Smith or Honeycrisp), peeled and chopped into small chunks
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup whole milk
  • 1/2 cup powdered sugar (for glaze)
  • 1 to 2 tablespoons milk or heavy cream (for glaze)

Instructions

  1. Step 1: Preparation and Oven Setup Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick cooking spray. You can also line it with parchment paper for easier removal.
  2. Step 2: Prepare the Apple Mixture In a small bowl, mix the chopped apples with the brown sugar and cinnamon. Stir until the apples are evenly coated and set the bowl aside.
  3. Step 3: Cream the Butter and Sugar In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using a hand mixer or stand mixer.
  4. Step 4: Incorporate Wet Ingredients Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully combined.
  5. Step 5: Mix Dry and Liquid Ingredients Whisk the flour and baking powder together in a separate bowl. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir until just combined, being careful not to overmix the batter.
  6. Step 6: Layer the Batter and Apples Pour half of the batter into the prepared loaf pan. Top with half of the cinnamon-apple mixture. Pour the remaining batter over the apples, and then top with the rest of the apple mixture. Use a knife to gently swirl the apples into the batter.
  7. Step 7: Baking the Bread Bake in the preheated oven for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 15 minutes before removing it.
  8. Step 8: Glaze and Serve Whisk the powdered sugar and milk together in a small bowl until smooth. Drizzle the glaze over the warm bread. Let the glaze set for a few minutes before slicing and serving.
