  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1 ½ cups old-fashioned rolled oats
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon, divided
  • 4 large Granny Smith apples, peeled and thinly sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • ¼ cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch or 9×9 inch square baking pan with parchment paper, leaving a little overhang on the sides. This will make it much easier to lift the bars out of the pan once they are baked and cooled.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the flour, rolled oats, salt, baking powder, and 1 teaspoon of the cinnamon. Stir the mixture until it forms a crumbly dough. Reserve about 1 ½ cups of this mixture for the topping.
  3. Transfer the remaining oat mixture into the prepared baking pan. Use your hands or the bottom of a measuring cup to press the dough firmly and evenly into the bottom of the pan. This creates a sturdy base for your apple filling.
  4. In another bowl, toss the sliced apples with the lemon juice, cornstarch, granulated sugar, and the remaining 1 teaspoon of cinnamon. Make sure every apple slice is evenly coated. The cornstarch will help thicken the juices as the apples bake, preventing a soggy crust.
  5. Spread the apple mixture evenly over the pressed crust. Take the reserved 1 ½ cups of the oat mixture and sprinkle it over the top of the apples, pinching it slightly with your fingers to create larger clumps of crumble.
  6. Place the pan in the center of the oven and bake for 40 to 45 minutes. The topping should be golden brown, and the apple filling should be bubbling slightly at the edges. Remove from the oven and let the pan cool completely on a wire rack before slicing.
