  • 1/4 teaspoon salt
  • 1 1/2 cups apples, peeled and finely diced (Granny Smith or Honeycrisp recommended)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a large mixing bowl, whisk together the melted butter and light brown sugar until the mixture is smooth and well combined. Add the egg and vanilla extract, beating vigorously until the batter looks glossy.
  3. In a separate medium bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, and salt. Ensure there are no large clumps of cinnamon or baking powder left in the mix.
  4. Gradually add the dry ingredients to the wet ingredients. Use a spatula to fold the mixture together until just combined. Be careful not to overmix, as this can make the blondies tough.
  5. Gently fold the diced apples and the optional chopped walnuts or pecans into the thick batter. The batter will be quite heavy, so ensure the apples are evenly distributed throughout.
  6. Spread the batter evenly into the prepared baking pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Let the blondies cool completely in the pan before slicing into squares.
