1/2 cup unsalted butter, melted and slightly cooled
1 cup packed light brown sugar
1 large egg, room temperature
1 tablespoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking pan with butter or line it with parchment paper, leaving a slight overhang on the sides for easy removal later.
In a large mixing bowl, whisk together the melted butter and packed brown sugar until the mixture is smooth and well-combined. Add the egg and vanilla extract, whisking vigorously until the batter looks glossy.
Using a spatula, gently fold in the flour, salt, and baking powder. Stir just until the white streaks of flour disappear. Be careful not to overmix, as this can make the blondies tough instead of chewy.
Add the semi-sweet chocolate chips and the chopped pecans to the bowl. Fold them in gently so they are evenly distributed throughout the thick batter.
Transfer the batter to your prepared baking pan. Use a spatula to spread it into an even layer, reaching all the corners. Place in the center of the oven and bake for 22 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
Remove the pan from the oven and place it on a wire rack. It is crucial to let the blondies cool completely in the pan before lifting them out and slicing into 16 squares. This allows the texture to set and ensures clean cuts.
