Ingredients

Scale
  • 2 cups pitted dark sweet cherries (fresh or thawed frozen)
  • 3 large eggs, at room temperature
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 2 tablespoons unsalted butter, melted (plus extra for greasing)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sliced almonds
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Generously grease a 9-inch round baking dish or a deep-dish pie plate with butter. If you want a little extra sweetness, you can sprinkle a thin layer of sugar over the buttered surface and shake off the excess.
  2. Spread the pitted cherries evenly across the bottom of the prepared baking dish. If using frozen cherries, make sure they are well-drained and patted dry so the extra moisture doesn’t make the batter soggy.
  3. In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is slightly pale and frothy. Gradually whisk in the milk, melted butter, almond_extract, and vanilla extract until well combined.
  4. Slowly sift in the all-purpose flour, almond flour, and salt. Whisk gently until the batter is smooth and there are no large lumps. The batter will be thin, similar to a crepe or pancake batter.
  5. Carefully pour the batter over the cherries in the baking dish. Sprinkle the sliced almonds evenly over the top of the batter to provide a lovely golden crunch once baked.
  6. Place the dish in the oven and bake for 35 to 40 minutes. The clafoutis is done when the edges are golden brown and puffed up, and the center is set but still has a slight wobble. Remove from the oven and let it cool slightly; the center will deflate a bit as it rests, which is normal.
  7. Dust the top generously with powdered sugar right before serving to give it a snowy, festive look.
