  • 3 large ripe pears (Bosc or Anjou work best)
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sanding sugar (optional, for topping)
  • 2 tablespoons apricot jam (optional, for glazing)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Peel, core, and slice the pears into 1/4-inch thick wedges. In a large mixing bowl, toss the pear slices with the melted butter, granulated sugar, cinnamon, vanilla extract, and lemon juice until evenly coated.
  3. On the prepared baking sheet, roll out your pie crust into a circle roughly 12 inches in diameter. If using store-bought dough, ensure it is at room temperature so it does not crack while rolling.
  4. Arrange the pear slices in the center of the dough, leaving a 2-inch border around the edges. You can stack them neatly in a spiral or pile them casually for a rustic look. Fold the edges of the dough over the pears, overlapping the crust as you go to create a border.
  5. Brush the folded edges of the crust with the beaten egg. Sprinkle the coarse sugar over the crust for an extra crunch. Bake for 35 to 40 minutes, or until the crust is deep golden brown and the pears are tender and bubbling.
  6. Optional: Heat the apricot jam in the microwave for 15 seconds and brush it over the warm pears for a professional shine. Let the galette cool for at least 15 minutes on the baking sheet before slicing.
