2 medium Granny Smith apples, thinly sliced and patted very dry
1/2 cup caramel bits or soft caramels
1 tablespoon heavy cream (for melting caramel)
1/4 cup chopped pecans or walnuts
1/2 teaspoon coarse sea salt
1/4 cup white chocolate chips (optional for drizzling)
Instructions
Line a large baking sheet with parchment paper or a silicone baking mat. This ensures the bark won’t stick and makes cleanup very easy.
Place the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the chocolate is completely smooth and melted. Be careful not to overheat it.
Pour the melted chocolate onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4 inch thick. It doesn’t have to reach the edges of the pan.
Immediately press the thinly sliced apples into the melted chocolate. Make sure the apples are very dry so they stick well. Space them out evenly across the surface.
Melt the caramel bits with the heavy cream in the microwave for about 45-60 seconds, stirring until smooth. Drizzle the warm caramel generously over the apples and chocolate base.
Sprinkle the chopped nuts and sea salt over the top while the caramel is still tacky. If using white chocolate, melt it and drizzle it over the top as a final touch. Place the tray in the refrigerator for at least 1 hour until firm.
Once the bark is completely set and cold, use your hands to break it into irregular shards or use a sharp knife to cut it into squares. Serve immediately.
