2 large Granny Smith apples (or any firm, tart apple)
1 tablespoon lemon juice
1 cup semi-sweet or dark chocolate chips
1/2 cup caramel bits or soft caramels
1 teaspoon heavy cream or milk (for melting caramel)
1/4 cup chopped peanuts or pecans (optional)
1/2 teaspoon coarse sea salt
1/4 cup white chocolate chips (for garnish)
Instructions
Wash and thoroughly dry the apples. Core them and cut them into thin, even slices or small wedges. In a medium bowl, toss the apple slices with lemon juice. This helps prevent them from turning brown and adds a nice acidic zing to balance the sugar.
Line a large baking sheet with parchment paper or a silicone mat. Pat the apple slices dry with a paper towel to ensure the chocolate sticks properly. Arrange the slices in a single, crowded layer so they are touching and forming a solid “bark” base.
Place the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until completely smooth. Repeat this process with the white chocolate chips in a separate bowl. Use a spoon or a piping bag to drizzle the dark chocolate generously over the apple slices.
Combine the caramel bits and heavy cream in a small microwave-safe bowl. Heat for 30 seconds, stir, and heat again until the mixture is smooth and pourable. Drizzle the warm caramel over the chocolate-covered apples in a decorative pattern.
While the chocolate and caramel are still wet, sprinkle the chopped nuts and sea salt over the top. Drizzle the melted white chocolate over everything for a beautiful finish. Place the baking sheet in the refrigerator for at least 30 minutes to allow the bark to set firmly.
