  • 2 cups all-purpose flour
  • 1 cup light brown sugar, packed
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup rolled oats
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon, divided
  • 4 large Granny Smith apples, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch square baking pan with parchment paper, leaving a slight overhang on the sides so you can easily lift the bars out later. Lightly grease any exposed pan surfaces with cooking spray.
  2. In a large mixing bowl, combine the flour, brown sugar, rolled oats, salt, and 1 teaspoon of the cinnamon. Add the cold, cubed butter. Use a pastry cutter or two forks to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  3. Press about two-thirds of the crumble mixture firmly and evenly into the bottom of your prepared baking pan. Bake this base for 10 to 12 minutes, or until it is just starting to set and looks slightly golden. Set the remaining crumble mixture aside for the topping.
  4. While the crust is baking, place the sliced apples in a medium bowl. Add the lemon juice, granulated sugar, cornstarch, the remaining 1 teaspoon of cinnamon, and the nutmeg. Toss everything together until the apples are thoroughly and evenly coated in the spice mixture.
  5. Spread the apple slices evenly over the pre-baked crust. Sprinkle the remaining crumble mixture over the top of the apples, covering them as much as possible. Return the pan to the oven and bake for 30 to 35 minutes, until the topping is golden brown and the apple filling is bubbling.
  6. Remove the pan from the oven and place it on a wire rack. It is very important to let the bars cool completely in the pan before slicing. Once cool, lift them out using the parchment paper edges and cut them into 16 even squares.
