¾ cup warm water (or hot coffee for deeper flavor)
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups cream cheese frosting (dyed orange or purple for Halloween)
Halloween-themed sprinkles or decorations
Instructions
Step 1: Preheat and Prep Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners. Using black or festive Halloween liners adds an extra touch of style to the final presentation.
Step 2: Combine Dry Ingredients In a large mixing bowl, sift together the all-purpose flour, granulated sugar, black cocoa powder, baking soda, and salt. Sifting is crucial here to ensure there are no clumps of cocoa powder, which can be quite stubborn.
Step 3: Mix in Wet Ingredients Add the egg, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Use a whisk or an electric mixer on medium speed to beat the mixture for about two minutes until the batter is smooth and well-combined.
Step 4: Add the Warm Liquid Carefully stir in the warm water or hot coffee. The batter will be very thin and liquid-like, but don’t worry—this is exactly how it should be. The hot liquid helps bloom the cocoa powder, intensifying the dark color and flavor.
Step 5: Fill and Bake Pour the batter into the prepared cupcake liners, filling each one about two-thirds of the way full. Place the tin in the center of the oven and bake for 18 to 22 minutes. You’ll know they are done when a toothpick inserted into the center comes out clean.
Step 6: Cool and Decorate Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Once they are cold to the touch, pipe on your frosting and add your favorite Halloween decorations like plastic spiders or candy eyes.
