Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or a 2-quart casserole dish with butter or non-stick cooking spray to ensure nothing sticks.
  2. In a large bowl, gently toss the berries with 1/4 cup of the sugar, the lemon juice, and the cornstarch. Once combined, spread the berry mixture evenly across the bottom of your prepared baking dish.
  3. In a separate medium bowl, whisk together the flour, the remaining 1/2 cup of sugar, baking powder, and salt. This ensures the leavening agents are evenly distributed for a fluffy topping.
  4. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to work the butter into the flour until the mixture looks like coarse crumbs with some pea-sized pieces of butter remaining.
  5. Stir in the milk and vanilla extract just until a thick dough forms. Do not overmix. Drop spoonfuls of the dough over the berry filling, leaving small gaps for the steam to escape and the fruit to bubble through.
  6. Place the dish in the oven and bake for 40 to 45 minutes. The cobbler is done when the topping is golden brown and the berry juices are thick and bubbling around the edges. Let it cool for about 10 minutes before serving.
