  • 1 cup rolled oats (old fashioned oats)
  • 3/4 cup all-purpose flour (or whole wheat pastry flour)
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup pure maple syrup
  • 1 cup Granny Smith apples, finely diced (about 1 medium apple)

Instructions

  1. In a medium-sized mixing bowl, combine the rolled oats, flour, cinnamon, baking powder, and salt. Use a whisk to stir them together until the cinnamon is evenly distributed throughout the oats and flour.
  2. In a separate large bowl, whisk together the melted butter, egg, and vanilla extract. Once combined, pour in the maple syrup and whisk again until the mixture is smooth and fully incorporated.
  3. Slowly add the dry ingredient mixture into the wet ingredients. Use a spatula to stir until just combined—be careful not to overmix. Gently fold in the finely diced apples until they are evenly spread through the dough.
  4. Cover the bowl and place it in the refrigerator for at least 30 minutes. This step is crucial because it allows the oats to absorb some of the moisture, which prevents the cookies from spreading too thin in the oven.
  5. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper. Scoop about 1.5 tablespoons of dough for each cookie and place them on the sheet. Use the back of a spoon to slightly flatten them, as these cookies don’t spread much on their own.
  6. Bake for 12 to 15 minutes, or until the edges are firm and the centers look set. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
