  • 6 medium flour tortillas (fajita or soft taco size)
  • 1/2 cup unsalted butter
  • 1/2 cup granulated white sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • Optional: Vanilla ice cream or caramel sauce for topping

Instructions

  1. Step 1: Preparation and Preheating: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with non-stick cooking spray or a little butter to ensure the enchiladas don’t stick to the bottom during the baking process.
  2. Step 2: Filling the Tortillas: Lay a flour tortilla flat on a clean work surface. Spoon about 2 to 3 tablespoons of the apple pie filling down the center of the tortilla. Fold in the sides and roll the tortilla up tightly, similar to a burrito or traditional enchilada.
  3. Step 3: Arranging the Dish: Place the rolled tortilla seam-side down in the prepared baking dish. Repeat this process with the remaining tortillas and filling until the dish is full. Ensure they are snug but not overly squeezed together.
  4. Step 4: Making the Cinnamon Glaze: In a small saucepan over medium heat, combine the butter, white sugar, brown sugar, and water. Bring the mixture to a gentle boil, stirring constantly. Once boiling, reduce the heat and let it simmer for about 3 minutes until the sugars are completely dissolved and the sauce is smooth.
  5. Step 5: Coating and Baking: Pour the hot sugar mixture evenly over the rolled tortillas in the baking dish. Sprinkle the ground cinnamon over the top. Let the dish sit for about 15 to 30 minutes before baking; this allows the tortillas to soak up some of the sweet liquid. Bake for 20 minutes or until the tops are golden brown and the sauce is bubbly.
