  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 large Granny Smith apples, peeled and diced
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper. In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until well combined. Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes, then set aside.
  2. In a small bowl, toss the diced apples with the cinnamon. In a separate bowl, combine the flour, oats, and brown sugar. Use a pastry cutter or your fingers to work the cold, cubed butter into the oat mixture until it resembles coarse crumbs. Set both the apples and the crumble mixture aside.
  3. In a large bowl, beat the softened cream cheese and 1/2 cup of sugar together until smooth and creamy. Add the eggs one at a time, beating slowly after each addition to avoid incorporating too much air. Stir in the vanilla extract until just combined.
  4. Pour the cheesecake mixture over the pre-baked crust and spread it evenly. Distribute the spiced apples over the cheesecake layer. Finally, sprinkle the oat crumble mixture generously over the top of the apples.
  5. Bake for 40 to 45 minutes, or until the cheesecake is set and the crumble topping is golden brown. Remove from the oven and let the pan cool completely on a wire rack. Once cooled, refrigerate for at least 3 hours or overnight before slicing into bars.
