  • 6 cups Cinnamon Toast Crunch cereal
  • 10 ounces mini marshmallows (about one bag)
  • 1/2 cup unsalted butter
  • 1/4 cup apple cider concentrate (boiled down from 1 cup of cider)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line an 8×8-inch or 9×9-inch square baking pan with parchment paper, leaving a slight overhang on the sides. Lightly grease the parchment with butter or non-stick cooking spray to ensure easy removal.
  2. In a large pot or Dutch oven, melt the unsalted butter over low heat. Once melted, stir in the apple cider concentrate, ground cinnamon, apple pie spice, salt, and vanilla extract until well combined.
  3. Add the mini marshmallows to the pot. Continue to cook over low heat, stirring constantly with a silicone spatula. Remove the pot from the heat just before the marshmallows are completely melted to prevent them from becoming too tough.
  4. Add the Cinnamon Toast Crunch cereal to the marshmallow mixture. Use your spatula to gently fold the cereal into the mixture until every piece is thoroughly and evenly coated.
  5. Transfer the mixture to your prepared pan. Using the back of a greased spatula or a piece of waxed paper, press the mixture down gently. Do not pack it too tightly, as this will result in hard bars. Let them cool at room temperature for at least 30 minutes.
  6. Once the bars are set and firm, lift them out of the pan using the parchment paper overhang. Use a sharp knife to cut them into 12 even squares and enjoy.
