Instructions
In a small saucepan over medium-high heat, bring the apple cider to a boil. Simmer for about 10 to 15 minutes until it has reduced to approximately 1/4 cup of concentrated liquid. Set aside to cool completely before using in the dough.
In a medium bowl, beat the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla until smooth. Use a small spoon to drop 24 small dollops onto a tray lined with parchment paper. Place the tray in the freezer for at least 20 minutes to firm up.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, vanilla extract, and the cooled apple cider reduction. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
Preheat your oven to 350°F (175°C). Scoop about 1.5 tablespoons of cookie dough and flatten it in your hand. Place a frozen cheesecake dollop in the center and wrap the dough around it, pinching to seal any gaps. Roll the ball in the cinnamon-sugar mixture until evenly coated.
Place the cookie balls on a baking sheet lined with parchment paper, spaced 2 inches apart. Bake for 10 to 12 minutes, or until the edges are set and the tops are slightly cracked. Allow the cookies to cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
