- 3 lb chuck roast (trimmed if needed)
- 2 tbsp steak seasoning
- 1 tbsp dried thyme
- 1 cup beef broth
- ⅓ cup water
- 1 tbsp cornstarch
- 2 lbs potatoes (optional)
- 1 lb carrots (optional)
- 1 yellow onion (optional)
Instructions
- Start by coating each side of the chuck roast with a light layer of oil.
- In a small bowl, mix together the steak seasoning and dried thyme.
- Heat a skillet over high heat until it’s hot, then sear each side of the roast for about 2-3 minutes.
- Once seared, place the roast in the slow cooker.
- Pour the beef broth into the hot skillet and allow it to simmer for one minute.
- If adding vegetables, wash, peel, and cut the potatoes, carrots, and onion into large pieces.
- Cook the roast on low for approximately 7-8 hours or on high for 3.5-4 hours.
- As you approach the end of the cooking time, check for tenderness with a fork.
- Once the edges start to fall apart, dissolve the cornstarch in water and pour it into the slow cooker, mixing well.
- Carefully remove the meat from the slow cooker onto a cutting board.
- Serve large chunks on a platter or return them to the slow cooker.
Notes
Searing the meat adds depth of flavor. Choose a chuck roast for best results and adjust cooking times as necessary for your slow cooker.
