Description

Crock Pot Chuck Roast is the ultimate comfort food that promises delicious, melt-in-your-mouth tenderness with minimal effort. Perfect for busy weeknights or cozy family gatherings.


Ingredients

  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 1 tbsp cornstarch
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)

Instructions

  1. Start by coating each side of the chuck roast with a light layer of oil.
  2. In a small bowl, mix together the steak seasoning and dried thyme.
  3. Heat a skillet over high heat until it’s hot, then sear each side of the roast for about 2-3 minutes.
  4. Once seared, place the roast in the slow cooker.
  5. Pour the beef broth into the hot skillet and allow it to simmer for one minute.
  6. If adding vegetables, wash, peel, and cut the potatoes, carrots, and onion into large pieces.
  7. Cook the roast on low for approximately 7-8 hours or on high for 3.5-4 hours.
  8. As you approach the end of the cooking time, check for tenderness with a fork.
  9. Once the edges start to fall apart, dissolve the cornstarch in water and pour it into the slow cooker, mixing well.
  10. Carefully remove the meat from the slow cooker onto a cutting board.
  11. Serve large chunks on a platter or return them to the slow cooker.

Notes

Searing the meat adds depth of flavor. Choose a chuck roast for best results and adjust cooking times as necessary for your slow cooker.
