- 2 cups cooked rice
- 1 lb chicken breast, diced
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: sesame oil for drizzling
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the minced garlic to the pan and sauté until fragrant, about 1 minute.
- Season with salt and pepper, and cook the diced chicken until browned and cooked through, about 5-7 minutes.
- Stir in the mixed vegetables and cooked rice, pour in soy sauce, and mix well. Cook for another 3-5 minutes.
- Top with chopped green onions and drizzle with sesame oil if desired. Serve warm.
Notes
Use day-old rice for the best texture. Feel free to swap mixed vegetables with your choice.
