Description

A delicious combination of tender chicken, fragrant garlic, and colorful vegetables, all tossed with rice and a hint of soy sauce, perfect for a quick weeknight dinner.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: sesame oil for drizzling

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the minced garlic to the pan and sauté until fragrant, about 1 minute.
  3. Season with salt and pepper, and cook the diced chicken until browned and cooked through, about 5-7 minutes.
  4. Stir in the mixed vegetables and cooked rice, pour in soy sauce, and mix well. Cook for another 3-5 minutes.
  5. Top with chopped green onions and drizzle with sesame oil if desired. Serve warm.

Notes

Use day-old rice for the best texture. Feel free to swap mixed vegetables with your choice.
