Crispy Black Bean Taquitos are a mouthwatering delight, perfect for a quick appetizer or a satisfying meal. With a crunchy exterior and savory filling, these taquitos pack so much flavor in every bite.

- 1 can black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 10–12 small corn tortillas
- Oil for frying
- Guacamole for serving
- Salsa for serving
Instructions
- In a bowl, mash the black beans with a fork until mostly smooth. Then mix in the corn, cumin, chili powder, salt, and pepper.
- Heat oil in a pan over medium heat, about 1/4 inch deep.
- To make the corn tortillas pliable, warm them slightly in the microwave for 15-20 seconds or on a hot skillet for a few seconds on each side.
- Spoon about 2 tablespoons of the black bean mixture into each tortilla and roll tightly.
- Once your oil is hot, place the rolled taquitos seam-side down in the pan. Fry for about 3-4 minutes on each side until golden and crispy.
- Remove the taquitos from the oil and let them drain on a plate lined with paper towels.
- Serve your crispy taquitos hot with guacamole and salsa for dipping.
Notes
For extra flavor, add diced onions or jalapeños to the filling. These can also be baked for a healthier option.
