- 4 strips of bacon
- 1 cup shredded cheese (cheddar or your choice)
- 1 large potato, diced
- 4 large flour tortillas
- Salt and pepper to taste

Instructions
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on a paper towel.
- Add diced potatoes to the skillet with some bacon fat and sauté until golden and tender, about 8-10 minutes. Season with salt and pepper.
- Whisk the eggs in a bowl with salt and pepper, then pour into the skillet with potatoes and scramble until fully cooked, about 3-4 minutes.
- Lay a tortilla flat and fill it with crispy bacon, scrambled egg-potato mixture, and shredded cheese. Roll tightly to form a burrito.
- Heat oil in the skillet and cook the burrito seam-side down until golden brown, about 2-3 minutes, then flip and brown the other side.
- Remove from skillet and let sit for a minute. Slice in half and serve hot.
