Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and vanilla extract until the batter is smooth.
- Heat a non-stick skillet over medium heat. Pour a small amount of batter into the skillet, swirling it around to create a thin layer. Cook for 1-2 minutes on each side until golden brown.
- In another bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
- In a separate bowl, macerate the berries with the tablespoon of sugar for about 15 minutes.
- To assemble, lay one crepe flat on a clean surface. Spread a layer of whipped cream on top, followed by a layer of the macerated berries. Carefully roll the crepe tightly.
- Place the rolled crepes in the refrigerator to chill for at least 120 minutes.
