Ingredients

  • 8 oz elbow macaroni
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 cup celery, diced
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup sweet pickle relish
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the elbow macaroni according to the package instructions. Once cooked, drain the macaroni and let it cool completely.
  2. In a large bowl, combine the mayonnaise and apple cider vinegar. Stir these two ingredients together until smooth.
  3. Add the cooled macaroni, diced celery, bell pepper, red onion, and pickle relish to the dressing bowl.
  4. Gently mix everything together until well combined. Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.
