Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink, about 3-4 minutes. Remove shrimp and set aside.
  4. Add orzo and chicken broth to the pot, bringing it to a boil.
  5. Reduce heat and let simmer until orzo is tender, about 8-10 minutes.
  6. Stir in heavy cream, lemon juice, lemon zest, oregano, and the cooked shrimp.
  7. Season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes to combine flavors.
  9. Garnish with fresh parsley before serving.
