- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cook until pink, about 3-4 minutes. Remove shrimp and set aside.
- Add orzo and chicken broth to the pot, bringing it to a boil.
- Reduce heat and let simmer until orzo is tender, about 8-10 minutes.
- Stir in heavy cream, lemon juice, lemon zest, oregano, and the cooked shrimp.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes to combine flavors.
- Garnish with fresh parsley before serving.
