- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup fresh spinach
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce heat and stir in heavy cream, then add the spinach and tomatoes. Allow the sauce to simmer for a few minutes until the spinach wilts and the sauce thickens slightly.
- Return the chicken to the skillet and coat it with the creamy sauce. Let it simmer for an additional 2-3 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For added depth of flavor, marinate the chicken in garlic and herbs beforehand. Adjust the consistency of the sauce to preference.
