- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package directions until al dente. Drain and set aside, keeping a bit of pasta water for later if needed.
- Brown the chicken in a large skillet with olive oil over medium-high heat for 6-7 minutes until browned. Remove the chicken and set aside.
- Sauté the minced garlic in the same skillet with melted butter for about one minute until fragrant.
- Create the sauce by stirring in the Cajun seasoning, then pour in the heavy cream and chicken broth. Simmer for 4-5 minutes until slightly thickened.
- Combine the grated Parmesan cheese until melted, then return the chicken and penne to the skillet, tossing to coat evenly. Add reserved pasta water if the sauce is too thick.
Notes
Adjust the Cajun seasoning to your spice preference. This dish can also be made with shrimp or sausage for variation.
