A delightful dish with Boursin cheese and chicken, enveloped in a creamy sauce, perfect for busy weeknights.
Ingredients
Scale
- 8 oz pasta of choice
- 2 boneless, skinless chicken breasts
- 1 cup Boursin cheese
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to the package instructions. Drain the pasta once it’s al dente and set it aside.
- Heat olive oil over medium heat in a large skillet. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side or until fully cooked. Remove the chicken from the skillet and set aside.
- Add chicken broth to the same skillet and bring it to a gentle simmer. Stir in heavy cream and Boursin cheese, mixing until the cheese melts and the sauce becomes creamy.
- Cut the cooked chicken into slices and return it to the skillet. Add the cooked pasta, tossing everything together until the pasta is well coated in the sauce.
Notes
Consider adding fresh herbs like basil or thyme for enhanced flavor. You can customize the dish with vegetables like spinach or sun-dried tomatoes.
