  • 1 pound ground beef
  • 4 slices bacon, chopped
  • 3 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Add the ground beef to the pot and cook until browned, making sure to drain any excess fat if necessary.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
  4. Add the diced potatoes and beef broth. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the heavy cream and shredded cheese until melted and smooth. Season with salt and pepper to taste.
