- 4 slices bacon, chopped
- 3 large potatoes, peeled and diced

- Salt and pepper to taste

Instructions
- Cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the ground beef to the pot and cook until browned, making sure to drain any excess fat if necessary.
- Stir in the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
- Add the diced potatoes and beef broth. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream and shredded cheese until melted and smooth. Season with salt and pepper to taste.
- Serve hot, garnished with the crispy bacon and green onions if desired.
