Description

A delightful dish combining tender chicken, vibrant broccoli, and creamy cowboy butter sauce over bowtie pasta, perfect for family dinners.


Ingredients

  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 2 chicken breasts, diced
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the bowtie pasta according to package instructions. During the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and paprika. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the lemon juice and zest to the skillet and stir to combine. Toss the cooked bowtie pasta and broccoli into the skillet, mixing thoroughly to coat all the ingredients.
  5. Garnish with chopped parsley before serving. Serve warm with salad or crusty bread.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet over low heat, adding a splash of water or extra butter for creaminess.
