A scrumptious seafood experience with clams in a rich and creamy coconut broth, balanced with fresh herbs and lime.


Ingredients

  • 12 clams, cleaned
  • 1 can (13.5 oz) coconut milk
  • 1 cup vegetable broth
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 1 tablespoon ginger, grated
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Sautéing onions and garlic in a large pot until translucent, about 3-4 minutes.
  2. Adding grated ginger and cooking for another minute.
  3. Pouring in coconut milk and vegetable broth, then stir to combine.
  4. Adding cleaned clams to the pot, cover, and cook over medium heat until clams open, about 5-7 minutes.
  5. Stirring in lime juice and fish sauce, then season with salt and pepper to taste.
  6. Serving the clams in bowls, garnished with fresh cilantro.

Ensure clams are fresh and properly cleaned. Adjust seasoning after adding lime juice and fish sauce.
