Description

A vibrant salad combining roasted sweet potatoes, chipotle seasoning, and a zesty honey-lime dressing, perfect as a side or light meal.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 400°F (200°C). While the oven is heating, peel and cube the sweet potatoes.
  2. Toss the cubed sweet potatoes with olive oil, chipotle powder, and season with salt and pepper. Ensure every piece is well coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until they are tender and slightly caramelized. Stir halfway through to ensure even cooking.
  4. In a large bowl, combine the black beans, corn, diced bell pepper, finely chopped red onion, and chopped cilantro.
  5. Whisk together the lime juice and honey in a small bowl until well combined.
  6. Once the sweet potatoes have finished roasting, allow them to cool slightly. Add them to the bowl of vegetables and pour the honey-lime dressing over the top. Toss gently to mix everything together.

Notes

Serve warm or chilled. Store leftovers in an airtight container for up to 3 days.
