A vibrant salad combining roasted sweet potatoes, chipotle seasoning, and a zesty honey-lime dressing, perfect as a side or light meal.

- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon chipotle powder
- Salt and pepper to taste
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons honey
Instructions
- Preheat oven to 400°F (200°C). While the oven is heating, peel and cube the sweet potatoes.
- Toss the cubed sweet potatoes with olive oil, chipotle powder, and season with salt and pepper. Ensure every piece is well coated.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until they are tender and slightly caramelized. Stir halfway through to ensure even cooking.
- In a large bowl, combine the black beans, corn, diced bell pepper, finely chopped red onion, and chopped cilantro.
- Whisk together the lime juice and honey in a small bowl until well combined.
- Once the sweet potatoes have finished roasting, allow them to cool slightly. Add them to the bowl of vegetables and pour the honey-lime dressing over the top. Toss gently to mix everything together.
Notes
Serve warm or chilled. Store leftovers in an airtight container for up to 3 days.
