Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic; sauté until translucent (3-4 minutes).
- Add chicken breasts; cook until browned on both sides (5-7 minutes).
- Pour in chicken broth and soy sauce; bring to a simmer, cover, and cook (15-20 minutes).
- Meanwhile, cook rice according to package instructions.
- In another pan, steam or sauté mixed vegetables until tender (5-7 minutes).
- To serve, place rice on plates, top with chicken and sauce, and arrange vegetables on the side.
- Garnish with fresh herbs if desired.
Notes
