  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic; sauté until translucent (3-4 minutes).
  3. Add chicken breasts; cook until browned on both sides (5-7 minutes).
  4. Pour in chicken broth and soy sauce; bring to a simmer, cover, and cook (15-20 minutes).
  5. Meanwhile, cook rice according to package instructions.
  6. In another pan, steam or sauté mixed vegetables until tender (5-7 minutes).
