- 4 large potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them several times with a fork.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes.
- Heat a skillet over medium heat. Add the ground beef and cook until browned.
- Once the potatoes are baked and slightly cooled, cut each potato in half lengthwise and scoop out some insides.
- Fill each potato half generously with the seasoned ground beef.
- Sprinkle shredded cheese over the top of each filled potato and return to the oven for 10 minutes.
- Add a dollop of sour cream on each half and sprinkle with chopped green onions. Serve and enjoy!
