Cheesy Taco Potatoes

Description

A delightful dish combining baked potatoes with the bold flavors of tacos, perfect for family dinners or gatherings.


Ingredients

  • 4 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them several times with a fork.
  2. Place the potatoes directly on the oven rack and bake for about 45-60 minutes.
  3. Heat a skillet over medium heat. Add the ground beef and cook until browned.
  4. Once the potatoes are baked and slightly cooled, cut each potato in half lengthwise and scoop out some insides.
  5. Fill each potato half generously with the seasoned ground beef.
  6. Sprinkle shredded cheese over the top of each filled potato and return to the oven for 10 minutes.
  7. Add a dollop of sour cream on each half and sprinkle with chopped green onions. Serve and enjoy!
