- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Combine the grated carrots, granulated sugar, brown sugar, and vegetable oil until well mixed.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt in a separate bowl. Gradually incorporate this into the wet ingredients, mixing until just combined. If desired, fold in walnuts and raisins.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan before cutting into squares and serving.
Notes
For a richer taste, top these bars with cream cheese frosting. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
