Description

Delightful and easy-to-make carrot cake bars that combine the comforting flavors of traditional carrot cake in a bar format.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the grated carrots, granulated sugar, brown sugar, and vegetable oil until well mixed.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt in a separate bowl. Gradually incorporate this into the wet ingredients, mixing until just combined. If desired, fold in walnuts and raisins.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan before cutting into squares and serving.

Notes

For a richer taste, top these bars with cream cheese frosting. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
