- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
- Cream cheese frosting (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Beat together the eggs, granulated sugar, brown sugar, and vegetable oil until smooth. Stir in the grated carrots and vanilla extract.
- Combine the flour, baking powder, baking soda, spices, and salt in another bowl.
- Add the dry ingredients to the wet mixture, mixing until just combined. If desired, fold in the walnuts. Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool in the pan before cutting them into squares. Frost with cream cheese frosting if desired.
Notes
Store leftovers in an airtight container for up to 3 days. They can be refrigerated for up to a week or frozen for later use.
