Description

Delightful carrot cake bars that combine warm spices with sweet carrots, topped with creamy frosting.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Beat together the eggs, granulated sugar, brown sugar, and vegetable oil until smooth. Stir in the grated carrots and vanilla extract.
  3. Combine the flour, baking powder, baking soda, spices, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture, mixing until just combined. If desired, fold in the walnuts. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bars cool in the pan before cutting them into squares. Frost with cream cheese frosting if desired.

Notes

Store leftovers in an airtight container for up to 3 days. They can be refrigerated for up to a week or frozen for later use.
