Description

A flavorful and comforting bowl of chili with tender chicken, creamy cannellini beans, and Cajun spices.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, then sauté until softened.
  2. Stir in the minced garlic and sauté for an additional minute until fragrant.
  3. Add the chicken breast, Cajun seasoning, salt, and pepper. Cook for approximately 5-7 minutes or until the chicken is no longer pink.
  4. Pour in the chicken broth, cannellini beans, and corn; bring to a boil. Reduce the heat and let it simmer for about 20 minutes or until the chicken is fully cooked. Remove the chicken, shred it, and return it to the pot. Serve hot, garnished with chopped cilantro.

Notes

Serve hot in bowls, topped with fresh cilantro. Great with crusty bread or rice.
