Cajun White Chicken Chili

Description

A wonderfully warm and flavorful Cajun-inspired chili, combining chicken and beans with vibrant spices.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) green chilies, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Chopped green onions for garnish
  • Cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until soft, about 3-4 minutes.
  2. Add chicken breasts to the pot and cook for 5-7 minutes, browning both sides.
  3. Stir in Cajun seasoning, followed by chicken broth, white beans, green chilies, and corn. Mix well.
  4. Bring to a boil, then reduce heat and let it simmer for 20-30 minutes, until chicken is cooked. Remove chicken, shred, and return to the pot. Season with salt and pepper, and stir again.

Notes

For a thicker chili, mash some of the white beans before adding. Adjust Cajun seasoning based on spice preference.
