A wonderfully warm and flavorful Cajun-inspired chili, combining chicken and beans with vibrant spices.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) green chilies, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup corn kernels (fresh or frozen)
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- Chopped green onions for garnish
- Cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until soft, about 3-4 minutes.
- Add chicken breasts to the pot and cook for 5-7 minutes, browning both sides.
- Stir in Cajun seasoning, followed by chicken broth, white beans, green chilies, and corn. Mix well.
- Bring to a boil, then reduce heat and let it simmer for 20-30 minutes, until chicken is cooked. Remove chicken, shred, and return to the pot. Season with salt and pepper, and stir again.
Notes
For a thicker chili, mash some of the white beans before adding. Adjust Cajun seasoning based on spice preference.
