Description

A delightful Cajun Potato Soup with creamy texture and bold flavors, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened and fragrant, about 3-4 minutes.
  2. Add diced potatoes and pour in the broth. Bring to a boil, then reduce heat to a simmer. Cook for about 20 minutes, or until potatoes are tender.
  3. Stir in Cajun seasoning and cream, mixing well. Taste and adjust with salt and pepper as needed.
  4. Using an immersion blender, puree the soup to your desired consistency, whether smooth or slightly chunky. Serve hot, garnished with chopped green onions.
