- 1 cup of cornmeal
- 1 cup of milk
- 1 cup of flour
- 1/4 cup of sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 2 large eggs
- 1/2 cup of unsalted butter
Instructions
- Preheat your oven to 425°F (220°C) to get it nice and hot for baking the cornbread.
- Combine the cornmeal, flour, sugar, baking powder, and salt in a large mixing bowl. Mix well to evenly distribute.
- Whisk together the milk and eggs in another bowl until combined.
- Pour the milk mixture into the dry ingredients. Stir gently until just combined.
- Place your cast iron skillet in the oven to melt the butter, keeping an eye on it to avoid burning.
- Once melted, pour half of the butter into the cornbread batter and mix it in gently.
- Pour the batter back into the skillet with the remaining melted butter.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the cornbread cool slightly before serving.
Notes
Serve with chili, gumbo, or grilled meats. It can also be enjoyed with butter and honey for breakfast.
