Ingredients

  • 1 cup of cornmeal
  • 1 cup of milk
  • 1 cup of flour
  • 1/4 cup of sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 1/2 cup of unsalted butter

Instructions

  1. Preheat your oven to 425°F (220°C) to get it nice and hot for baking the cornbread.
  2. Combine the cornmeal, flour, sugar, baking powder, and salt in a large mixing bowl. Mix well to evenly distribute.
  3. Whisk together the milk and eggs in another bowl until combined.
  4. Pour the milk mixture into the dry ingredients. Stir gently until just combined.
  5. Place your cast iron skillet in the oven to melt the butter, keeping an eye on it to avoid burning.
  6. Once melted, pour half of the butter into the cornbread batter and mix it in gently.
  7. Pour the batter back into the skillet with the remaining melted butter.
  8. Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  9. Let the cornbread cool slightly before serving.

Notes

Serve with chili, gumbo, or grilled meats. It can also be enjoyed with butter and honey for breakfast.
