  • 1 cup apple cider (reduced to 1/2 cup for maximum flavor)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely diced

Instructions

  1. Place the apple cider in a small saucepan over medium heat. Simmer until the liquid has reduced by half, leaving you with 1/2 cup of concentrated cider. Set it aside to cool slightly before using.
  2. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper for easy removal.
  3. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Ensuring these are well-combined helps the bread rise evenly.
  4. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 2 to 3 minutes using an electric mixer.
  5. Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract and the cooled, reduced apple cider.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix. Gently fold in the diced apple pieces with a spatula.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
