  • 1/2 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar, packed (for streusel)
  • 1/2 cup chopped pecans or walnuts (for streusel)
  • 1 teaspoon cinnamon (for streusel)
  • 4 tablespoons cold butter, cubed (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch square baking pan or a 9-inch springform pan with butter or non-stick cooking spray to ensure the cake releases easily after baking. You can also line the bottom with parchment paper for extra security.
  2. In a small bowl, combine the 1/2 cup flour, brown sugar, cinnamon, and chopped nuts. Use a fork or a pastry cutter to cut in the cold, cubed butter until the mixture resembles coarse crumbs. Set this aside in the refrigerator to keep the butter cold while you prepare the batter.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the pumpkin puree, sour cream, and vanilla extract until the wet ingredients are well combined.
  4. In a separate medium bowl, whisk together the 2 cups of flour, pumpkin pie spice, baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet pumpkin mixture. Stir gently just until no streaks of flour remain; do not overmix, as this can make the cake tough.
  5. Spread half of the pumpkin batter into the bottom of your prepared baking pan. Sprinkle half of the chilled streusel mixture evenly over the batter. Carefully spread the remaining batter over the streusel layer, then finish by sprinkling the rest of the streusel over the top of the cake.
  6. Place the pan in the center of the oven and bake for 40 to 45 minutes. The cake is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. Allow the cake to cool in the pan for at least 15 to 20 minutes before slicing.
