  • 3 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 4 tablespoons cold unsalted butter, cubed
  • ¾ cup pumpkin puree (not pumpkin pie filling)
  • ¾ cup buttermilk
  • 1 large egg
  • ½ cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper. You can also use a seasoned cast-iron skillet for a crispier crust.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking soda, salt, and pumpkin pie spice. Ensure there are no lumps in the baking soda so the bread rises evenly.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to work the butter into the flour until the mixture resembles coarse crumbs. Small bits of butter throughout the dough create a lovely texture.
  4. In a separate medium bowl, whisk together the pumpkin puree, buttermilk, and egg until smooth. If you are adding raisins or chocolate chips, stir them into this mixture now.
  5. Make a well in the center of the dry ingredients and pour in the pumpkin mixture. Stir with a wooden spoon until a shaggy dough forms. Turn the dough onto a lightly floured surface and knead gently 4 or 5 times just until it comes together. Do not overwork it!
  6. Form the dough into a rounded disk about 1.5 to 2 inches thick. Place it on your prepared baking sheet. Using a sharp knife, cut a deep “X” into the top of the loaf. This helps the heat reach the center of the bread.
  7. Bake for 40 to 45 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom. Remove from the oven and let it cool on a wire rack for at least 20 minutes before slicing.
