  • 1/2 cup rolled oats (old-fashioned oats)
  • 1/4 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 scoop (approx. 30g) vanilla protein powder
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 large egg (or a flax egg for a vegan version)
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1 tsp maple syrup or stevia (optional for extra sweetness)
  • A pinch of salt
  • Optional: 1 tbsp dark chocolate chips or crushed pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish with a little bit of coconut oil or non-stick cooking spray to ensure the oats don’t stick.
  2. Place the rolled oats, pumpkin puree, protein powder, milk, egg, pumpkin pie spice, baking powder, salt, and sweetener into a high-speed blender. Blend for about 30 seconds until the mixture is completely smooth and resembles a thick batter.
  3. If you are using chocolate chips or pecans, stir them into the batter by hand. Pour the mixture into your prepared baking dish. You can sprinkle a few extra toppings on top for a beautiful presentation.
  4. Place the dish in the oven and bake for 22 to 25 minutes. The oats are done when the top is firm to the touch and a toothpick inserted into the center comes out clean. Be careful not to overbake, as you want the center to remain moist.
  5. Remove the dish from the oven and let it sit for 2 to 3 minutes. The oats will firm up slightly as they cool. Serve warm and enjoy your healthy autumn treat!
